Corn and Ricotta Fritters

Basic and easy recipe for your family breakfast where yo can add sides like saluted vegetables and ham for extra flavour.

Ingredients (7 servings)
  • 2 eggs
  • 1 cup of Dairy Farmers Shape non fat milk
  • 250g Perfecto Italiano ricotta cheese
  • 1 cup of self raising flour
  • ½ cup of self raising wholemeal flour
  • ½ cup corn kernels
  • 40g chopped chives
  • 1 tablespoon olive oil

Method
  1. Whisk eggs, milk and ricotta in a bowl.
  2. Sift flour into egg mixture.
  3. Add corn and chives and combine.
  4. Heat oil in frypan and add the amount of corn fritters you prefer.
  5. Cook both sides until golden brown.
