Vegetable Omelette

Ingredients (1 servings)
  • Cooking spray
  • 1 cup sliced vegetables (broccoli, mushrooms, tomatoes and spinach) or ¾ cup Edgell mixed vegetables
  • Parsley
  • 2 eggs
  • 2 tablespoons water
  • ¼ teaspoon salt and pepper
  • 1 tablespoon low fat cream cheese
  • ½ grapefruit


  1. Use cooking spray and sauté vegetables until soft.  Add parsley.
  2. Drain excess water.
  3. Whisk eggs, water, salt and pepper in a bowl.
  4. Return vegetables to pan and pour in egg mixture.  Cook for 3 minutes or until omelette has set.
  5. Top omelette with cream cheese and fold in half.

Serve with ½ grapefruit.
