Low Carb Garlic Prawn Pizza

Ingredients (24 servings)

Pizza Base

  • 600g cauliflower florets
  • 60g Almond Meal
  • 55g Parmesan Cheese
  • 2 whole eggs
  • 1 egg white


Pizza Topping

  • 60g Tomato Paste
  • 100g Don Ham Leg Shaved 87% Fat Free (thinly sliced)
  • 150g De Costi's Seafood's Garlic Prawns
  • 150g red Capsicum (thinly sliced)
  • 80g Chopped Mushrooms
  • 100g Bega Cheddar So light 50% reduced fat cheese
  • 2g parsley, chopped

  1. Preheat oven to 200 degrees.
  2. Line x 2 large baking trays or round pizza trays with non-stick baking paper.
  3. To make the pizza base, place the cauliflower into a food processer & blitz until mixture resembles fine crumbs. Then transfer to a mixing bowl & add the almond meal, parmesan cheese, eggs, egg white and salt & pepper for seasoning & mix together until well combined & a soft dough forms.
  4. Divide the mixture in half & spread into rounds onto each baking tray just like you would a normal pizza base.
  5. Bake for 20-25 minutes in the oven until golden & crisp.
  6. Remove pizza bases from oven & add tomato paste to the base, followed by the rest of the pizza topping ingredients.
  7. Cook in a hot oven for 8-10 minutes or until prawns are cooked through.
  8. Serve while hot & enjoy!
