Cheeky Low Fat Chicken Nuggets

Want a healthy treat for the kids on the weekend or for the holidays? Then try these Cheeky Crunchy Chicken Nuggets. They can be served with crunchy veggies that will add colour and fun to any kid's plate.

Ingredients (4 servings)
  • 500 grams of skinless chicken breasts cut into 4cm pieces
  • 1 egg white
  • ¼ cup of low fat buttermilk
  • ¼ cup flour
  • 1 cup of crushed cornflakes
  • ¼ teaspoon paprika
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon of ground chilli (optional)

Method
  1. Preheat oven to 200 degrees.
  2. Place a baking sheet on a baking tray and coat with non-stick cooking spray.
  3. In three separate bowls: combine the egg white and buttermilk; mix flour with the seasonings; and one with the crushed cornflakes.
  4. Roll the chicken pieces in the flour bowl and shake off excess flour.
  5. Dip the chicken pieces into the milk mixture and then coat with the crushed cornflakes.
  6. Place the chicken on the baking tray and bake for 10 mins or until golden brown, turning them halfway through.
