Cottage Cheese Quiche

Easy baked quiche - keto friendly

Ingredients (5 servings)
  • 5 Eggs 
  • 450g Cottage Cheese 
  • 125g Cheddar Cheese (grated) 
  • 100g Diced Leg Ham 
  • 100g Shallots 
  • 100g Spinach 
  • Cracked Pepper (to taste)

Method
  1. Preheat oven to 160ÂșC 
  2. Whisk eggs and cracked pepper in bowl. 
  3. Lightly pan fry diced bacon and shallots for 2 minutes. 
  4. Stir cottage cheese, grated cheddar cheese, ham and shallots with eggs. 
  5. Pour mixture into a greased 20cm square baking dish. 
  6. Bake, uncovered for 45 minutes or until a knife inserted in centre comes out clean. 
  7. Let stand for 15 minutes and slice in 5 even portions.
