Ingredients (2 servings)
  • 20g Spinach
  • 150g Sweet Potato, roasted or steamed
  • 100g Quinoa, cooked
  • 50g white Cabbage, thinly sliced
  • 50g raw Broccolini, cut into small bite size pieces
  • 250g Cherry Tomatoes, sliced in half

 

(Dressing)

  • 20mls Bertolli Extra Virgin Olive Oil
  • 20mls Apple Cider Vinegar raw unfiltered
  • 2.5 g Dijon mustard average all brands
  • Pinch Himalayan Salt all brands average
  • 5g fresh mint leaves, chopped

Method
  1. Roast sweet potato or steam until cooked.
  2. Cook quinoa & set aside to keep warm.
  3. In a bowl combine raw broccolini, spinach, cabbage, cherry tomatoes, quinoa & sweet potato.
  4. In a separate bowl, mix together all salad dressing ingredients until creamy. Pour over salad & stir well to combine.
  5. Add some grilled chicken or a cooked salmon fillet for extra protein
