Anzac Biscuits

Ingredients (20 servings)
  • 175g oats
  • 40g desiccated coconut
  • 60g flaked almonds
  • 30g honey
  • 30g macadamia nut oil
  • 15g baking soda
  • 1 serve vanilla extract
  • 15 ml water

Method
  1. Combine oats, coconut and almonds in a food processor.
  2. Add oil, honey, baking soda and vanilla.
  3. Mix well for about 15 - 30 seconds or until just combined.
  4. Add the water and process again to help the cookie mixture stick
  5. Form into 20 small cookies and place onto a baking sheet lined with baking paper.
  6. Flatten down with enough room around each cookie.
  7. Bake for 20 -30 minutes in a low 150 C oven, or until golden brown.
  8. Cool completely before eating and enjoy.
