Oat Bran Muffins

Looking for a health snack to have with kids after school, found it! This muffin is VVT approved and delicious.

Ingredients (12 servings)
  • 1 cup LSA mix
  • 1 cup wheat flour
  • 1 cup oat bran
  • 1 cup brown sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 2 tablespoons cinnamon
  • 1 ½ cups shredded carrots
  • 2-3 apples, cored, chopped and shredded
  • ½ cup walnuts, chopped
  • ½ cup raisins
  • ¾ cup milk
  • 2 eggs, beaten
  • 1 teaspoon vanilla essence

Method
  1. Mix flour, flaxseed, bran, sugar and dry ingredients together.
  2. Shred carrots/apples and add these with raisins and nuts to dry ingredients and mix well.
  3. Stir together milk, eggs, vanilla and combine.
  4. Fill cup cake papers or muffin tray and bake for 30 minutes or until cooked.
