Vegan Choy Bow

Ingredients (3 servings)
  • 400g Vegie Delights savoury mince
  • 100g Slendier spaghetti
  • 100g carrot
  • 200g button mushrooms
  • 100g cos lettuce
  • 20ml vegetarian oyster sauce
  • 10ml olive oil
  • 75g spring onion

Method
  1. Dice carrots, chop spring onions and mince garlic.
  2. Cook over medium heat, alongside vegie mince for about 7-8 mins. Halfway through, add two generous tablespoons of oyster sauce. Drizzle about a tablespoon worth of soy sauce on mixture, or add salt to taste.
  3. While this is cooking, prepare Slendier noodles as per packet instruction. Drain and chop them roughly. Add them to mince mix.
  4. Separate, rinse and dry cos lettuce leaves. Serving is about 3-4 lettuce leaves/wraps per person
